Get stuffed.

Georgia from Bakery Bookery posted the recipe for Stuffed Capsicums with Quinoa & Mushrooms and as soon as i saw it i knew i had to try it!

I adapted it a leeetle because –

 a) do you think i could find fresh spinach in this whole entire town? That’s a negative. So i used some buk choy (which worked out splendidly!)

b) I had sultanas in the house so used them in the place of currants.

c) I knew it would be a struggle to get the Mr to even try it because it was meatless and looked “fancy”, so omitted the nuts in an attempt to make it more “Mr – friendly” (although really, he should just suck it up and eat what i cook 😉 )

d) Also “stuffed” some portobello mushroom cups.

It was surprisingly simple to do, and totally easy to mix and match and adapt. Thank you so much for posting it Georgia, it was delicious!

Just an average Thursday evening.

The cat is sleeping on the ironing board her perch.

And I am about to cook dinner. Tonight is a vege stirfry with my special sauce*.

We are both eagerly awaiting the arrival of our favourite Mr from another day down the mine.

And that’s about it! 😀

*Special Sauce

Sweet chilli – Kecap Manis – garlic – ginger – coriander – and a little turmeric for colour. Delicious.

Quinoa

So it seems like the latest “it” grain is quinoa. On my quest for interesting vegetarian meals it kept popping up and intruiged me!

I bit the bullet and bought some from a health shop on Ebay, and it arrived this afternoon 😀

Georgia from Bakery Bookery made a delicious looking Quinoa Tabbouleh that i’m dying to try!

And just looking at this Vegetable Quinoa Pilaf makes me hungry!

What’s for dinner?

Last night i was all set to make some vegetarian tacos. That is, until i did something to my back and couldn’t stand, let alone cook. Yowza 😦

Anyway, feeling pretty good today and nothing can stop me from trying this recipe!

The original one can be found at Taste , but i’m going to tweak it up a bit so watch this space!

My very first on-purpose vegetarian creation

*On-purpose because i actually went looking for a vego recipe, as opposed to say…eating an apple 😛

Vege Patties

Ingredients

2/3 cup plain flour

1 zucchini, grated

1 medium beetroot, grated

1 small brown onion, finely chopped

2 cloves (or equiv) garlic, crushed

1/2 cup frozen peas/corn/carrot mix (or equiv)

1 egg, lightly beaten

Method

Combine ingredients and season. Shape into patties and refridgerate for 30 mins+ before cooking, to help them hold their shape

*It seemed a little bland to me, so i added a fair bit of ground coriander (cilantro?) root, and ginger.

All ready to go

 

I took the precaution of wearing rubber gloves...hellllllo beetroot!

My uneducated theory - pinkness helps to give "meaty" appearance? Maybe?

 

The end result - actually rather delicious!
