My very first on-purpose vegetarian creation

10 Jan

*On-purpose because i actually went looking for a vego recipe, as opposed to say…eating an apple 😛

Vege Patties

Ingredients

2/3 cup plain flour

1 zucchini, grated

1 medium beetroot, grated

1 small brown onion, finely chopped

2 cloves (or equiv) garlic, crushed

1/2 cup frozen peas/corn/carrot mix (or equiv)

1 egg, lightly beaten

Method

Combine ingredients and season. Shape into patties and refridgerate for 30 mins+ before cooking, to help them hold their shape

*It seemed a little bland to me, so i added a fair bit of ground coriander (cilantro?) root, and ginger.

All ready to go

I took the precaution of wearing rubber gloves...hellllllo beetroot!

Very, umm...pink

My uneducated theory - pinkness helps to give "meaty" appearance? Maybe?

The end result - actually rather delicious!

What we also ate - sausages for the Mr

And a few pics from yesterday evening 😀

REALLY not in the mood to have my photo taken!

I love that smile.

getting a bit arty 😉

And there you have it – very yummy vege patties, very relaxed evening at home ♥
